We take extra steps to raise our beef as natural as possible. That means that we raise the animals that are used in our beef program ASH free: NO antibiotics, steroids, or growth hormones. There are no growth hormones or steroids used on our farm at all, but occasionally we do have to use antibiotics because we do have calves that get sick. We treat as long as possible without using antibiotics, but we do use them to keep calves from suffering and/or dying. When this happens we treat the sick calf, document the treatment, and market these specific animals other ways.
To help negate the use of antibiotics, we manage our cattle with a preventive mindset. We have implemented practices that allow us to prevent health problems instead of reacting to them when they occur.
All our beef is processed under USDA inspection. We have chosen to dry age our beef for a minimum of ten days to maximize tenderness. Everything is then vacuum packed and frozen. Our meat has no preservatives or additives, which is why we preserve naturally, by freezing. The picture to the left is proof that additives make a big difference between our beef and others.
We guarantee that our beef will have a quality grade of Choice or better. There are four quality grades: Prime, Choice, Select and Standard. The quality grade is based on the amount of marbling within the meat, which are the little specks of fat inside your steak. Marbling is what gives the meat tenderness and flavor. Choice has the proper amount of marbling to have great flavor and fork tenderness, without being excessively fat.
We raise our animals naturally by not using antibiotics, steroids or hormones, but we also feed them naturally. Cattle are designed to eat grass and grain. It is a common misconception that corn is not natural for cattle to eat, but it has been used as a stored feed for longer than anyone knows. We choose to use as little stored feed as possible which is why we put so much emphasis on our grazing program. By grazing we are able to cut our expenses which allows us to keep our cost low for our customers.
We raise our cattle on pasture during the summer and hay during the winter; then, we finish on grain. We have chosen to finish our beef on grain over the last 60-90 days to ensure that they are on a balanced diet which allows them to have a quality grade of Choice or higher. This diet gives us confidence that you will experience the same great taste, tenderness and satisfaction every time you purchase our product.
Every animal that goes through our beef program is bred, born and raised on our family. By being committed only using calves raised by our family we can guarantee that no antibiotics, steroids or hormones have been used. We are also able to control the genetics of the animals used. Genetics are so important for the tenderness and flavor of our meat, which is why we invest so much time and energy selecting the best genetics available.
